Bistro Lab Cafeteria and Production Kitchen: A Learning Enterprise

Opened on 4 January 2018, the cafeteria and bakery serving both Asian and Western cuisines, also feature weekly lunch set specials, fusion salads and sandwiches, European breads, Asian buns, cakes, pastries, and more.

With a scenic view of the Bedok Reservoir, this 2-storey facility is managed by the Centre for Applied Nutrition Services under the School of Applied Science.  It is also a training venue for students from the Diploma in Baking and Culinary Science as part of their work-based learning of the daily operations at the cafeteria to enrich and better relate their learning experience.  This unique F&B facility showcases the application of catering technology and science through the exploration of new food concepts and ingredient applications to offer customers a healthful and nutritive dining option.   

At a glance, the cafeteria is just like any other offering an array of menu items to satisfy the palettes of the millennials.  However, it’s a test-bedding ground for staff and students to explore new food concepts and ingredient applications along with their industry partners.  Analyzing the foods offered, customers may be able to notice the use of functional ingredients and foods that are specially put together for that healthful touch. 

 

Open to the public, this cafeteria is a NEA-licensed outlet that will provide an environment that facilitates the chemistry of interaction, relaxation and creativity.  Named as Bistro Lab, the hundred-seater cafeteria is opened during semester time on weekdays from 10 am to 5 pm with lunch set meals served only during 11 am to 2 pm.  On vacation and examination periods, the cafeteria opens from 11 am to 5 pm.
